On Saturday 4th March 2017 the quest of Victoria Square and the Women’s Institute to find the best ‘Victoria Square’ Sandwich in Northern Ireland came to an end when Jennifer Creelman from Macosquin WI, representing the Lower Bann Area, was crowned as the overall winner and Star Baker. The live final held in Victoria Square saw six skilled finalists from the WI work against the clock to bake and decorate their own Victoria Sandwich showstopper under the watchful eye of host and expert judge Jenny Bristow. Jennifer’s winning cake was chosen for its light, moist sponge, flavoursome buttercream and jam filling, and beautiful Easter bunny spring-themed decorations, creatively made using dairy milk chocolate as soil and coconut for grass!
